The "Historic Hotel/Restaurant of the Year" award, which recognizes hotels and restaurants committed to preserving and maintaining historic buildings, will be presented for the 27th consecutive time in 2023. It is based on collaboration between the historic monuments, hotel and catering and tourism sectors, and is supported by the umbrella associations GastroSuisse, HotellerieSuisse, SuisseTourisme and ICOMOS Switzerland, the Swiss national section of the International Council on Monuments and Sites. Made up of experts in monument conservation, architecture, history, the hotel industry and catering, the jury selects the winners on the basis of the applications submitted and after a site visit.
Bought by its current owners in 2018, Le Tonnelier underwent a complete refurbishment and restoration, in collaboration with the cantonal historic monuments department, generating an elegant and striking revaluation of the building and the locality. In particular, the restoration of the covered murals dating back to 1900 has brought the Belle Époque back to life in Bulle.
